Interview with Graciela Silva – Café Fusiones

In the heart of Chachapoyas, Café Fusiones has become a benchmark for regional gastronomy, sustainability, and culture. We spoke with its founder, Graciela Silva, to discover the secrets of this unique space where specialty coffee and fusion cuisine combine with respect for the environment and local traditions.

1. To begin, tell us how Café Fusiones was born and what philosophy inspires you?

Café Fusiones was born from the idea of creating a traditional, welcoming, and cultural space where local and innovative flavors come together, combining quality coffee with a creative gastronomic offering. Our philosophy is based on offering unique experiences, prioritizing fresh ingredients, close attention, and pride in our roots, mainly focusing on offering specialty coffee from the Amazonas region through our coffee plants and the Lab Cafés Especiales de Fusiones laboratory.

2. The name “Café Fusiones” is very suggestive. What concept or experience do you seek to offer your diners?

We seek precisely that: a fusion. As we express in our materials, we want “to offer a unique gastronomic experience that not only satisfies the palate but also respects and promotes the natural beauty that surrounds us”. For us, fusion means uniting the traditional flavors of the region with sustainable practices, offering in each dish and each cup “a unique experience where mystique, aroma, and flavor are fused in a sustainable way”. Each visit is a sensory journey that connects with the land, local producers, and the pleasure of eating well.

3. We know your menu is very varied. What are those “Special Fusion Dishes” that set you apart?

“Our offering is diverse and satisfying for all meals of the day. From energy-packed breakfasts to comforting dinners, each dish on our menu is a celebration of authentic and fresh flavors.” Among our specialties, the Sinchi Breakfast stands out, a unique creation we describe as “an ode to traditional flavors that will transport you directly to our roots with a healthy eating style”. We also offer options such as tamales, juane, special roast beef sandwiches, roast pork, quinoa salad, soups, creams, and grilled chicken. The fusion is reflected in the combination of contemporary techniques with native ingredients like quinoa, charqui, or Amazonian coffee.

4. Your menu also includes vegan, vegetarian, and gluten-free options. How important is inclusion in gastronomy to you?

For us, inclusion is part of our commitment to health and well-being. “Our menu is an expression of our dedication to offering healthy and delicious culinary options, made with local ingredients that care for both your well-being and your palate.” We want everyone, regardless of their dietary preferences or needs, to be able to enjoy a complete experience. To ensure the safety of celiacs, we have separate processes and trained staff; for vegan dishes, we use natural substitutes such as plant milks, spices, and healthy fats.

5. What local ingredients or products stand out in your kitchen? Do you work with local producers?

Yes, we work closely with local farmers. “The selection of 100% organic ingredients not only guarantees the exceptional flavor of each dish and cup of coffee but also protects biodiversity and supports local farmers committed to good ecological practices.” We use products such as local coffee (from small coffee growers in the Amazonas region), artisanal chocolate, honey, quinoa, mashua, and a variety of grains and vegetables from producers in Chachapoyas. Among the star ingredients are our specialty coffee from our coffee plants and native cocoa.

6. On your website, you mention a specialty coffee laboratory (Fusiones Lab). Could you tell us more about this space?

“Café Fusiones has taken a bold step in the coffee world by presenting its latest innovation: Lab Cafés Especiales, a specialty coffee laboratory that takes coffee lovers on a sensory journey from roasting to cup. Located in the heart of Café Fusiones, Lab Cafés Especiales is a space where coffee becomes a canvas of refined techniques, art, and experience. From the initial roasting stage to the culmination in a fragrant cup, visitors have the opportunity to be active participants in this enriching process. Here, connoisseurs and the curious alike can discover the nuances of each stage, from selecting the perfect beans to the art of the exact roast.” The experience culminates in a guided tasting where each participant appreciates how their decisions influence the final flavor profile.

7. Your location in the center of Chachapoyas is privileged. How would you describe the atmosphere inside the establishment?

“The atmosphere of Café Fusiones is a tribute to nature and sensory enjoyment. Visitors are welcomed into a meticulously designed space where recycled wood and hanging plants intertwine in a harmonious dance. Every corner is imbued with freshness and tranquility, creating the perfect setting to escape the hustle and bustle of modern life and savor every moment.”

8. You define yourselves as the “first cultural café” in Chachapoyas. What does this concept mean?

Being the first cultural café means that we go beyond serving coffee and food. We have created a space where culture is also experienced. We have a Braille menu to ensure accessibility, a reading area with books in several languages, and we are part of the cultural route “Ollas no Comunes”, which promotes the handicrafts of Huancas, a pottery village with a millenary tradition. In addition, we work with single mothers as heads of household, generating job opportunities and supporting social development.

9. You have very extensive opening hours: Monday to Saturday from 8:00 AM to 10:00 PM and Sundays from 4:00 PM to 10:00 PM. How do you maintain quality throughout the day?

We achieve this through standardized processes, continuous team training, and rigorous quality control for each preparation. We work with fresh ingredients and efficient organization in the kitchen and bar to ensure that every customer receives the same level of excellence at any time of the day. Staff rotation allows us to always maintain warm, attentive, and friendly service.

10. Several awards appear on your website. What are they and what do they mean to you?

They are distinctions obtained for our commitment to quality, service, and innovation. For us, they represent the effort of the entire team and, above all, the trust of our customers, which motivates us to continuously improve with innovative proposals.

11. What ecological practices have you implemented since your opening?

Our commitment to the environment is essential. Since November 2018, we have been working on composting in partnership with the municipality, separating organic waste to turn it into fertilizer that we use for our plants. We maintain a zero plastic policy: glass containers and, for delivery, biodegradable materials. Recycled wood and hanging plants are part of our decor, creating a fresh and responsible atmosphere.

12. For someone visiting Café Fusiones for the first time, what dish or drink would you recommend?

In the morning, the Sinchi Breakfast is a must. For coffee lovers, we recommend choosing your favorite brewing method: “V60, Chemex, Italian press, French press, Aeropress, Japanese siphon, or drip”. For lunch or dinner, the juane or roast pork are excellent. As a signature fusion dish, the special roast beef sandwich combines modern techniques with local meats and Amazonian herb sauces.

13. What plans or new developments do you have for the future?

We are working on new dishes that fuse current trends with local ingredients, as well as themed gastronomic experiences. We seek to strengthen and promote the experiential coffee experience (brewing methods, tastings). We want to continue positioning ourselves as a reference in the city and the Amazonas region.
